    How to make a peanut shortbread ring? Prepare the dough. For this we will use a deep container. Grind a piece of butter so that it quickly becomes softer and more flexible. Cut it into small pieces or grate it and leave it at room temperature for a while.

    Separately, sift the flour through a sieve, add salt and soda, mix all the dry ingredients of the dough. Add wheat flour with salt and soda in parts to the already soft butter. Rub all the ingredients with your fingers, eventually obtaining a rather greasy sand mass.

    Add cinnamon to the dough to taste. Beat a chicken egg and add sugar. Continue kneading the dough with your hands and do it fairly quickly so that the oil does not have time to form a greasy film on the surface. Next, form the dough into a ball, place it in a bowl and cover it with cling film. Place the dough in the refrigerator for 15 minutes.

    At this time, prepare the cookie topping, ours is peanuts. Transfer it to a dry, clean frying pan and, stirring constantly, lightly fry until light golden brown. Place the prepared peanuts on the work surface and chop them in any convenient way: you can do this with a rolling pin, running it over the peanuts, or chop the nuts using a knife, blender or meat grinder.

    Now take the slightly chilled dough out of the refrigerator and roll it out with a rolling pin into a layer 4–6 mm thick. Next, using special round molds, squeeze the cookies out of the layer. Instead of molds, you can take a glass and a glass. In the center of each resulting circle of dough, make another cutout with a shape of smaller diameter - so that you get a ring.

    Place the prepared cookies on a floured surface of the board so that they do not stick and put them in the refrigerator for 10 minutes. Then break the egg, separating the white from the yolk. Beat the yolk a little and brush each cookie with it.

Place the cookies ready for baking onto a baking sheet lined with parchment paper and place it in an oven already preheated to 180-200°C. Bake the peanut rings until golden brown, about 10-15 minutes. Determine the exact baking time and temperature based on your oven.

I really enjoyed these cookies while they were baking - the aroma filled the whole house. I had great pleasure treating myself to these tea rings. And, of course, I didn’t forget about my family - all my loved ones also liked the cookies. I replaced some of the flour with coconut flour for an unusual texture; I had to slightly change the proportions of liquid ingredients. The cookies themselves took longer to bake than indicated in the recipe - about 20 minutes. I attribute it to the peculiarities of the oven. I decided not to replace the nuts themselves; I really love peanuts.
