Instead of baking powder and regular flour, you can use the same amount of self-raising flour (190 g).

    Place the saucepan on the stove and heat, stirring, over low heat until the butter has melted. Remove the saucepan with the honey mixture from the heat and leave to cool for 5 minutes.

    In a bowl, combine flour, baking powder, salt and cinnamon.

    Mix everything with a spoon, or better yet, sift through a sieve to saturate the flour with oxygen.

    At first the dough will stick to your hands, but as you knead it it will become less and less sticky. The finished dough should be very soft and pliable. Try not to add excess flour to it, otherwise the cookies will not turn out as crumbly and airy as desired.

    Roll the dough into balls the size of a walnut or slightly larger. I got 13 balls.

    Place the resulting balls on a parchment-lined baking sheet, leaving some space between them. Lightly flatten the balls with your hands or the shaped bottom of a glass. I made small holes in the cookies using a wooden squeezer.

If the cookies are left in the oven, they will turn from soft and crumbly to hard. They should be slightly browned on top and bottom.

    If the cookies are browned on the bottom but still pale on top, leave them in the cooling oven for another 5 minutes, moving the baking sheet to the upper level. Remove the finished cookies from the oven. Since the pan is still hot, the cookies continue to brown on the bottom. And to prevent it from burning, remove it from the baking sheet.

Therefore, I added one teaspoon of water twice and the dough became as needed. She formed eleven circles and flattened them with her hands. I liked the author's idea of ​​making a hole in the cookies. But since I don’t have such kitchen utensils, I made a hole with a wooden stick. The cookies inside turned out fluffy and airy. I made these honey cookies yesterday. It gets ready very quickly!!! Tasty, aromatic, with a pronounced honey taste. I didn't add cinnamon, I added raisins. The cookies turned out dense because they were over-baked, but very tasty. I will definitely cook again!!! Next time I'll add more walnuts and try to keep it in the oven less.
