Meat with eggplant and potatoes in a slow cooker

STEP 1
Required ingredients. Rinse the meat under running water, peel and wash potatoes, onions and carrots well, simply wash and dry peppers, eggplant, tomatoes and greens.
STEP 2
We cut the eggplant lengthwise into 4 parts, then crosswise to a thickness of 1 cm. It’s good that there are now an abundance of vegetables in supermarkets and even in winter you can please yourself with fresh eggplants

Now salt it well and set it aside - this will remove all the bitterness from them.
STEP 4
We cut the meat, but not finely
STEP 5
We set the "Baking" program. Add olive oil to the multicooker bowl and add the meat. In the meantime, let's get on with the rest of the vegetables.

Potatoes cut into large cubes

We also cut the pepper coarsely

Also cut the tomato into large cubes

While we were chopping the vegetables, the meat was already fried. It took me 15 minutes

Now set the program to “Stew” for 50 minutes

Add the rest of the vegetables to the meat, add salt, add Provençal herbs and black pepper, add a glass of hot water and stir, you can also use cold water, but then the cooking time must be increased
STEP 13
After 20 minutes, add tomato juice, you can replace it with tomato paste. But I have homemade juice and I trust it more. In principle, juice can be added immediately when adding vegetables.
STEP 14
The signal sounded indicating the end of the program. Finely chop the greens and garlic
STEP 15
Add to the stewed vegetables and meat, close the lid and leave - let them soak in the aromas of each other. I do this in the “Heating” mode, which turns on immediately after the end of the program - I think it’s the same in other multicookers. After 10 minutes, place on plates and taste
