Pork with vegetables
Pork remains the second most popular type of meat in Russia, not only because of its cheapness, but also due to its delicate taste and the ability to prepare a great variety of dishes. For example, recipes for pork with vegetables may include both main hot courses and all kinds of snacks, salads, and baked goods. In addition, this meat cooks quickly, almost always remaining soft and juicy. If you are unlucky and the pork is a little tough, there are many ways to correct this omission.
Firstly, the meat can be pre-marinated. And then it’s not at all necessary to fry it (like kebabs). No, in this form it can be added to absolutely any dish: casseroles, stews, porridges, and so on.
Secondly, tough pork can be lightly pounded with a hammer, not to the same extent as with chops - lightly without destroying the fibers. This will also make the meat more tender and softer.
Thirdly, if someone doesn’t like the pickled taste of the food too much, you can simply leave the pork for a while, coated with ordinary vegetable oil. Or mustard. Or sour cream, mayonnaise. Finally, soak in milk or plain water.
Any vegetables are suitable for “framing” pork: potatoes, carrots, onions, cabbage, turnips, pumpkin, zucchini, eggplant, bell peppers, tomatoes. You can choose more exotic ones, it goes well with everything. They can be stewed, fried, baked, steamed, or boiled. Roast, popular in our country, is, in fact, also pork with vegetables, baked in pots, a special form or on a baking sheet in the oven.
Tomato paste, sour cream, cream, mustard, soy sauce, and ketchup also harmonize well with pork and vegetables. They can be added to the dish during cooking. Add salt, dry spices, aromatic seasonings and fresh herbs to taste and at your discretion.
