    How to make minced pork cutlets? Prepare your food. Choose meat with layers of fat; the cutlets will turn out juicier. To make it easier to cut the meat, freeze it a little in the freezer if it is fresh, or do not defrost it completely if it is frozen. Cut the meat into very small pieces.

    Place the finely chopped meat in a bowl. Add an egg to it. Peel the onion and cut into small cubes. Better yet, grate it - this will give the cutlets extra juiciness. You can also add grated garlic.

    Then add some mayonnaise. Instead of mayonnaise, you can use kefir or sour cream. To hold the cutlet mass together, add starch to the minced meat. Or flour if there is no starch. Add a little chopped herbs to taste. You can use green onions as greens. Wash and dry the greens first.

    Salt the minced meat a little (do not forget about the presence of mayonnaise, which already contains salt) and add spices to taste. Mix the whole mass well until smooth.

    Heat a frying pan over high heat and pour a little vegetable oil on it. The minced meat for the cutlets turns out to be very soft and juicy, so you won’t be able to make cutlets from it. Place it in the pan using a spoon, forming small cutlets, not very thick, so that they have time to fry. Fry them on both sides over low heat until golden brown.

    The cutlets should be well cooked. So turn them over several times. At the very end, it is better to cover the frying pan with a lid and keep the cutlets for 5 minutes on the lowest heat.

I prepared minced pork cutlets. Of course, I had a meat grinder on hand, but I really like minced meat products. After adding all the ingredients to the minced meat, I left it to marinate for about an hour (but it could be longer), this will only improve the taste of the finished cutlets. The cutlets turned out juicy, aromatic, and very tasty. But next time I won’t add greens to the minced meat; they quickly burned on the surface of the cutlets when frying. I bought a pork neck and after cutting I left some of the pulp for minced cutlets. I finely chopped the meat with a large sharp knife, it is very convenient to do this. I added grated onion, one egg, one tablespoon each of starch and mayonnaise to the meat (I did not add herbs and dry spices). I mixed everything and added a little salt. The minced meat did not turn out cool, I put it on the frying pan with a spoon and trimmed the edges of the cutlets. I fried the chopped pork cutlets for 5-6 minutes on each side until golden brown. Then I kept it on low heat under the lid for another 10 minutes. The cutlets were covered with an appetizing crispy crust, the meat inside was very juicy and soft. The onion gave its flavor to the cutlets; I really liked the fact that it was grated and not chopped. In this case, the cutlets are more uniform in consistency, without onion pieces.
