STEP 1
How to make meat stew from pork with vegetables? First of all, prepare all the necessary products. Which cut of pork is best for this recipe? You can use any part of the animal, I took the neck. If you have a frozen piece of meat, then remove it from the freezer in advance and defrost it. Rinse the pork and dry it with paper towels.
STEP 2
Cut the meat into small pieces of the same size.
STEP 3
Prepare the vegetables. Peel potatoes, onions, garlic and carrots. Cut off the stem of the zucchini. If you have a young zucchini, then leave it as is. For more mature vegetables, cut off the rough skin and remove the seeds. Cut the bell peppers in half and remove the core. Wash all vegetables and dry with a kitchen towel.
STEP 4
Cut the onion into quarter rings, and the carrots into semicircles, circles or cubes, as you are more accustomed to.
STEP 5
Chop the bell peppers into cubes approximately 1cm in size. by 1 cm. To make the finished dish look very appetizing and bright, use peppers of different colors if possible. Chop the garlic finely.
STEP 6
Cut the tomatoes into medium-sized cubes. If desired, remove the peel from the tomatoes in advance. To do this, pour boiling water over the tomatoes, leave for a minute, then drain the hot water, cool the tomatoes slightly and easily remove the skin.
STEP 7
Heat odorless vegetable oil in a frying pan with a thick bottom and high edges. Send the pork to fry. Cook until golden brown, stirring the pieces occasionally.
STEP 8
Add carrots and onions to the pan. Stir and leave for two to three minutes.
STEP 9
Add bell pepper and garlic to the meat. Stirring, cook for about 5 minutes.
STEP 10
Add tomato paste, mix everything well, leave on the stove for another couple of minutes.
STEP 11
Place the diced potatoes and zucchini into a cauldron or thick-rimmed pan.
STEP 12
Next add the tomatoes.
STEP 13
Transfer the contents of the frying pan to the saucepan. Add salt to taste, ground black pepper, a couple of bay leaves and pour one glass of water. If you want to get the stew in the form of a thick soup, then add a little more water, but keep in mind that tomatoes and zucchini will give juice. At this stage, you can add any favorite spices.
STEP 14
Mix everything well, cover the pan with a lid and place on the stove. Bring to a boil over high heat, stir everything again and reduce heat to just below medium. With the lid closed, simmer the stew until thickened and all ingredients are cooked. This will take from 30 to 50 minutes.
STEP 15
Taste the finished stew for salt and add more salt if necessary. Sprinkle with finely chopped herbs, stir and leave on the stove for another minute.
STEP 16
Done, ready to serve!
