    How to make sorcerers with meat? Prepare your food. It’s better to take pork with a layer of lard - the filling will be juicier. I had lean pork. Rinse the meat and dry with paper towels. Wash the potatoes well under running water with a brush and dry.

    First of all, start preparing the meat filling for the sorcerers. Cut the pork into small pieces and grind in a meat grinder. Minced meat, by the way, is easier to make from slightly frozen meat.

    Peel one onion and chop very finely. You can, like me, use a meat grinder to chop onions. Add chopped onion, salt, and spices to taste to the minced pork. Mix it well until smooth. Set the filling aside to steep for a while.

    Now make the dough for sorcerers (pancakes). Peel the potatoes and grate them on the finest grater. To save time, potatoes can also be passed through a meat grinder. But in the original recipe from my grandmother there was a grater, the kind with spikes that grates very finely, almost into a puree.

    Add egg, flour and salt to the potato mixture. Knead the dough well. The amount of flour may vary depending on the consistency of the dough. It should become quite thick, like rich sour cream.

    Pour vegetable oil for frying into a frying pan and heat it over medium heat. Place one tablespoon of potato dough on a hot frying pan. Place one heaped teaspoon of minced meat on top. Spread the minced meat in a thin layer.

    Top the filling with another spoonful of potato dough.

    Fry the sorcerers over low heat for five minutes on each side until golden brown. You can cover the pan with a lid at the end of frying so that the meat filling is cooked accurately.

    Place the finished sorcerers with meat on paper towels so that it absorbs excess fat. Serve them hot with sour cream. Salted and pickled vegetables will also come in handy. Bon appetit!

For a hearty snack, I decided to cook sorcerers with meat. I had ready-made minced pork, and I chopped the potatoes using a blender - this greatly simplified and speeded up the cooking process. I also liked the fact that you don’t need to bother with forming the sorcerers: both the potato mass and the minced meat are laid out in the pan with a spoon. The result is a hearty, tasty, appetizing dish. Served piping hot, with sour cream and homemade pickles. Thanks to the author for the recipe!
