STEP 1
Dissolve sugar and salt in a glass of warm water. Remove the butter from the refrigerator and let it soften while we prepare the dough base. Pour the mixture into a bowl, beat the egg into it. Shake it up. Add a tablespoon of vinegar (9%). Stir the mixture.

Pour sifted flour into this mixture in parts. And knead the dough.
STEP 3
We look at the consistency of the dough. The dough should be elastic and soft, not stick to your hands. If necessary, add a little flour. Roll the dough into a ball.

Divide the dough into 4 equal pieces.

Divide the softened butter into four equal pieces.

Roll out each piece of dough on a floured board into a thin rectangular layer about 3 mm thick.

Spread it with butter, distributing it evenly over the dough with a spatula. For each piece of dough, a piece of butter. The pie will require two of these pieces of dough.

Let's prepare the ingredients. If you are using ready-made puff pastry, remove it from the freezer and let it melt. You can take any part of the chicken; we need boneless meat. We wash the meat and boil it in salted water until tender, let it cool. You can use smoked chicken thighs; the pie will have a pleasant smoked flavor.

Roll out each piece of dough into a thin round layer.

Wash the potatoes, peel them and grate them on a medium grater; if the potatoes are fresh and very juicy, then the juice must be squeezed out, otherwise the dough will become wet.

Wash the green onion thoroughly and finely chop it with a knife.

Cut the chicken meat into small pieces with a knife or split it with a fork.

Place one piece of dough into a greased baking dish. Place a layer of grated potatoes on it, salt and pepper the potatoes to taste. Sprinkle with chopped onions. Place pieces of chicken on top. You can also add a little salt and pepper.
STEP 14
Cover the top with a second layer of dough, pinching the edges so that the filling is tightly closed. We make a small hole in the middle of the pie, it is necessary for steam to escape while the pie is baking.
STEP 15
In a bowl, beat a chicken egg with a pinch of salt. Brush the top of the pie with the beaten egg. Cover the pie pan with foil. Preheat the oven to 180 degrees. Bake the pie at this temperature for about 25 minutes. Then remove the foil and bake for about 10 more minutes, let the pie brown on top. Remove the pie from the pan. Let it cool a little, cut into portions and serve. Enjoy your tea!
