    How to make a snail with puff pastry cheese? Prepare your food. My dough is yeast-free, it is more like filo dough, from which such a pie is baked in Greece. You can also take frozen spinach, but then you need to defrost it first. Cheese is traditionally used in brine - feta or feta cheese. But you can replace it with any one you have at hand. My sesame is black. Remove the dough from the freezer in advance.

    First of all, let's do the filling. Spinach, if fresh, rinse well and dry. Then chop it finely.

    Place a frying pan on low heat and pour vegetable oil onto it. Add spinach. Simmer (simmer) it for 5 minutes, stirring occasionally. Spinach tends to shrink greatly in volume when stewed.

    Take a bowl, place the steamed spinach in it, and cool it slightly. Grate the cheese on a coarse grater. Break one egg into the filling. The second will be used to grease the pie. Add a pinch of salt. Do not oversalt - the cheese is quite salty, keep this in mind.

    Roll out the defrosted soft dough on a floured work surface. Make it thin enough - just a few millimeters - then the cake will be more tender.

    Place the filling on the strip. You don’t need to put a lot, it may not pinch. I also don’t recommend putting all the filling on the whole dough at once - it may soften. Do it better one strip at a time.

    Pinch the edges of the dough to form a long sausage. Pinch the edges too.

    Take a baking tray and line it with baking paper. Starting from the center, lay out the finished dough ropes with the filling, twisting them in a spiral. Place the sausages seam side down and secure them together when joining. Tuck the end of the last bundle under the pie.

    Lightly beat the remaining egg with a fork. Brush the top of the pie with beaten egg using a pastry brush - this will give it a golden brown crust when baking. You can use one yolk for this. If desired, sprinkle the cake with sesame seeds. I only had black, so I sprinkled it on it.

    Bake the snail in the oven, preheated to 180°C, baking time - from 20 minutes to half an hour. Focus on the appearance of the pie. The finished pie is good both hot and cold.
