Frozen blueberry pie

Airy pie with bright and juicy berries! The pie turns out very tender, blueberries add juiciness to the pie, but currants, raspberries or cherries are suitable instead (but to be honest, it turns out especially tasty with blueberries). It is better to bake such a pie in a large pan so that it is not too high, this way it bakes much faster. Help yourself!

    Ingredients. Thaw the blueberries first, place them in a sieve and let the excess liquid drain.

    Add kefir to the egg mixture (or homemade sour milk, as I do), sour cream and vegetable oil; if desired, you can add vanilla sugar.

    In a separate bowl, sift the flour with baking powder and a pinch of salt. While stirring, pour the liquid part into the flour and knead the dough with quick movements.

    Add defrosted blueberries, stir several times, the dough is ready.

    We put it in a baking dish (we take a large form, mine is about 35x25). And put it in an oven preheated to 180 C for 40 minutes (the time is approximate, the baking time depends on the height of the pie!). Check readiness with a skewer! If after 40 minutes the top of the pie is browned, but the inside is still raw, cover the top with foil and bake until done.

    Take the finished pie out of the oven, let it cool completely, cut it into portions, sprinkle with powdered sugar and serve. Bon appetit!

I baked the pie in a round glass pan and it doubled in size in the oven. Next time I’ll listen to the author and take a rectangular shape so that it is a little lower. I made it with frozen cherries, did not defrost them first, rolled them in starch and added them to the dough. I made a French shirt; when baking, the edges of the pie pulled away from the sides. The pie could have been removed even from a hot pan without loss, but I still let it cool. The pie turned out lush, silky, with a pleasant sourness of cherries. Very tender and tasty. Eh, blueberries don’t grow in our area, and you can’t always find frozen ones in supermarkets. And the loose, airy slices of blueberry pie look so delicious!
