Cottage cheese casserole with crispy crust

STEP 1

Prepare the ingredients.
STEP 2

Prepare the curd layer: beat the curd with a blender. Beat eggs with sugar, add lemon zest. Combine cottage cheese and egg-sugar mixture, stir until smooth.
STEP 3

To prepare the shortbread base, cut the cold butter from the freezer into small cubes.
STEP 4

Grind the flour with sugar and butter until it forms bread crumbs. Add soda, salt and mix well. Set the oven to preheat to 180 degrees.
STEP 5

Line the bottom of a baking dish with parchment and grease the sides with butter. Pour most of the sand crumbs onto the bottom, tamp down and make sides.
STEP 6

Place the filling and smooth it out.
STEP 7

Spread the rest of the sand crumbs. Place in a preheated oven at 180 degrees for 40-45 minutes until the top layer is golden brown (it took me 40 minutes).
