Place the canned peas in a colander to drain the liquid. When the cooked foods have cooled, start preparing the salad.

    Cut the peeled boiled potatoes into medium or small cubes.

    Cut the peeled boiled carrots into cubes slightly smaller than the potatoes.

    Cut the pickled cucumbers first lengthwise and then crosswise to make smaller cubes than potatoes and carrots. I did not peel the cucumbers; they are soft. If yours is hard, then it is better to remove it.

Our family loves Olivier very much. Although I prepare various salads for holiday feasts, this legendary salad is always on our table and one of the first to fly away) I always prepare a large portion of it, so I increased the amount of ingredients in this recipe using a special calculator. I believe that the flavor of this salad comes mainly from the peas, pickles and sausage. Therefore, I chose the peas carefully, taking from the brain varieties, which are very tasty. Instead of boiled sausage I used pork ham. And I had my own cucumbers. I opened a jar of the ones I packed in June. They were in a sweet brine and the salad also tasted with a hint of sweetness. It turned out very tasty when all the ingredients were combined) Instead of fresh dill, I sprinkled a little dry dill, it also went perfectly with the salad. Everyone liked Olivier, and the guests and I ate a whole bowl over the course of the evening)) Even small children ate the salad, but without adding mayonnaise.

Hello. I decided to make my favorite Olivier salad with pickled cucumbers and classic sausage. I cut boiled potatoes, carrots, eggs, onions, doctor’s sausage and pickled cucumbers into the size of green peas. I add a little pepper and salt if necessary, but I don’t do that. I use frozen peas, boiled in salted water for 3 minutes. Season with mayonnaise with the addition of 1 tsp. ready mustard. I mixed everything carefully and served it to the table. Bon appetit)))))
