STEP 1

How to make Ox salad for the New Year's table? 2021 will pass under the symbol of the white bull, so I'm making a light salad. For a beautiful design, I will need three different ones, but in harmony with each other according to taste. To create a bull's head, a salad with chicken, pineapple and corn, with mayonnaise dressing, is well suited. The chicken can be boiled, smoked or fried - your choice. Cheese may be your favorite, but I took Russian. Boil the eggs hard.
STEP 2

I'm making a salad with fried chicken fillet. If you want to do the same, first wash the meat and dry it thoroughly with paper towels. Trim off fat and film as much as possible. Then cut the fillet into thin strips along the grain. And then these strips across the grain into squares, about 1.5 x 1.5 cm. Place the meat in a colander and add a little flour. Dredge all pieces thoroughly and shake off excess flour. The meat will quickly fry and be juicy.
STEP 3

Heat a frying pan, then pour in a little refined oil and let it heat well over high heat. Just place all the meat at once into well-heated oil. Don’t rush to stir it, let the crust set and brown slightly. Only then stir, then a couple more times. Thin fillet pieces are fried for only 3-4 minutes. Remove the finished meat from the stove, add salt and pepper. Let it sit covered for a while, then cool completely.
STEP 4

Place the cooled meat into a deep salad bowl. Add drained corn and finely chopped pineapple, as well as finely chopped nuts. Grate the eggs on a coarse grater and the cheese on a fine grater. At this stage, the salad bowl can be closed and put in the refrigerator overnight, and seasoned and stirred before serving or creating a themed bull figure. To season the mayonnaise, squeeze the garlic, but you can add it directly to the bowl.
STEP 5

To create the horns and forelock you will need a cheese salad. For the horns, finely grate two types of cheese, squeeze the garlic through a press and season with mayonnaise. Divide the salad and add finely grated fresh carrots to 1/3, from this part we will make a forelock.
STEP 6

When turning previously prepared salads into bulls, start as close to serving as possible so that the festive decoration does not lose its presentable appearance. Start by preparing the head elements. Cut out the nose and ears from boiled sausage or brighter ham. From the egg - the whites of the eyes. Nostrils, eyebrows and eyes, can be made from black grapes or olives. I first drew a sketch so that the salad would be included in the chosen dish. I checked all the cut out elements against the sketch and adjusted the size.
STEP 7

To serve, I chose a flat dish in the shape of an egg, 26x30 cm. Apply drops of mayonnaise onto the dish at the extreme points of the contour of the figure. I noted the location of the horns, ears and the overall outline of the head.
STEP 8

Mix the main salad with chicken and start laying it out along the outline. Gradually add volume, form a higher forelock area. Then use your hands to form horns from the cheese salad and place them in their proper place. Hands should of course be clean.
STEP 9

Then finely grate the remaining protein and a little hard cheese on top of the main salad. This is an imitation of bull wool and, as in nature, it can be heterogeneous. Secure the eyes, eyebrows, ears and nose, and the bull's lip. Lastly, distribute the cheese salad with carrots, form a funny forelock. Don't forget to clean the plate from fallen crumbs, everything should be neat.
STEP 10

Before serving, add herbs to the edges of the plate, creating a “clearing”. Place a flower or greenery in your slightly open mouth. Apply a little grated cheese to the ears, imitating wool. That's it, serve! And let the funny bull bring you everything you want in the New Year 2021!
