Step-by-step preparation
STEP 1
First of all, prepare the carrots and nuts for the biscuit. Peel the raw carrots, rinse and grate on a medium grater. Chop the walnuts a little with a sharp knife. There is no need to grind them into flour, they should be felt in the finished biscuit. Add orange zest to the carrots.
STEP 2
Combine eggs and sugar in a mixing bowl. Beat them into a fluffy mass.
STEP 3
Then mix flour with soda, vegetable oil and cinnamon into the egg mixture. Do this by hand, using a whisk, to keep the dough fluffy.
STEP 4
Add grated carrots with zest and chopped nuts to the dough. Stir the dough until smooth.
STEP 5
Pour the finished dough into a baking dish and place in the oven, preheated to 180 degrees, for 40-50 minutes. The baked biscuit springs back perfectly when pressed.
STEP 6
Remove the finished biscuit from the oven and release it from the mold. Cool completely. Then wrap in cling film and put in the refrigerator. I usually do this at night. During this time it will rest and can easily be cut into 2 cakes.
STEP 7
Before assembling the cake, soak the cake layers in syrup. I use thick, caramel syrup. But you can also soak it in syrup from canned pineapples.
STEP 8
For the cream, whip cream, 33-35% fat, with powdered sugar. Stir room temperature cottage cheese into the cream.
STEP 9
Spread the sponge cake with the resulting cream and add chopped canned pineapples.
STEP 10
Cover with the second cake layer and coat the top and sides of the cake with cream. Place the assembled cake in the refrigerator for several hours so that it is well soaked and hardened.
STEP 11
For the final decoration of the cake, whip the cream with powdered sugar until stiff peaks form. Set aside a little white cream for the ears. Color the rest gray using gray food coloring.
STEP 12
Cut off the sides and top for the ears of the frozen cake to form the muzzle of the mouse. Apply white cream in the area of the ears.
STEP 13
Then, using a pastry bag filled with cream, highlight the ears.
STEP 14
Decorate the cake on all sides with gray cream.
STEP 15
Using melted chocolate, draw eyes and antennae. The nose can be made from pink chocolate or pink cream (then you will need a drop of pink dye). The rats are ready for 2020! Happy New Year!
