Pineapple cake
Lovers of juicy, bright-tasting homemade baked goods will appreciate this type of cake. Depending on where exactly and in what form we add pineapples, we get desserts that are very different in appearance, composition, design and preparation technology.
So, homemade pineapple cake can be prepared without baking, turning it into a delicious mousse cake. All you need for this is cream, gelatin, sugar, and fruit. In a round bowl you can place beautifully chopped pineapple pieces, then pour the gelled mixture over them and keep them in the refrigerator overnight.
But you can bake a pineapple cake in the oven without any problems. After all, there is no need to add them to the dough - we use pineapples mainly in the filling, in the cream. And the cakes can be made using any dough: sponge cake, puff pastry, shortbread, custard, honey. The cream is then prepared using sour cream, cream, cream cheese, cottage cheese, gelatin, jelly, and starch.
In addition to pineapples, you can add other fruits and berries to the cake: peaches, strawberries, and so on. These cakes look very beautiful in white: when they are topped with white icing or sprinkled with coconut flakes. In this case, it is also better to leave the sponge cake white, not chocolate, like the layer inside.
It is preferable to take canned pineapples for the cake. They, unlike fresh ones, are more delicate in structure, sweet and juicy. Sometimes it is recommended to drain excess liquid from them, which can cause the cake to “leak”. In some recipes, pineapples and juice are boiled with the addition of starch or gelatin to make the filling more stable and hold its shape.
