Biscuit cake with fruits

STEP 1
Take the oil out in advance so that it is at room temperature. Bake a sponge cake: divide 4 eggs into whites and yolks. Beat the whites first, then add the yolks, sugar, and finally the flour. Bake in a round high pan for 30 minutes at 180 degrees. Cool, cut into 2 layers.

My son’s birthday is tomorrow, time is short, and I need to prepare a lot of things, so I took ready-made sponge cakes. Tested - just perfect for this cake!

Cut the bananas into thin slices.
STEP 4
Rub the cottage cheese through a sieve. The mass will become much more tender.
STEP 5
Soak the gelatin in milk in advance for swelling.
STEP 6
Beat the eggs with sugar (in the photo I have one and a half times the norm, my son likes more curd mass) until completely dissolved

Add butter gradually, constantly whisking with a mixer.
STEP 8
Gradually add the pureed cottage cheese (or curd mass), at the end a little vanilla for aroma, beat.
STEP 9
Melt gelatin in a water bath over low heat, stirring. Let cool slightly.
STEP 10
Add gelatin to the curd mass with a teaspoon, whisking continuously.
STEP 11
The result is a homogeneous airy curd mass.
STEP 12
Drain the pineapple juice from the jar. At your discretion, it can be juice from any other fruit, but pineapple is the most neutral and unsweetening.

Let's start assembling our cake. Take a springform pan that fits the size of the sponge cakes. 1. Place a biscuit cake on the bottom of the mold. Moisten with pineapple juice and add chopped bananas.

Spread half of the curd mixture onto the bananas.
STEP 15
Cover with a second sponge cake and repeat the procedure: soaking, bananas, curd mass. If desired, you can add chopped strawberries to the curd mass; you can put fruit jelly on the second sponge cake. Fantasize. On top is another sponge cake cover that will need to be decorated.
STEP 16
Actually, decorating the cake depends on the time of year and mood. Any fruit you like is suitable and filled with transparent jelly (for cake).

I’ll share some design options for my son’s favorite cake. It has been made according to this recipe for 20 years. There are green and black grapes, pineapples, strawberries, waffle flowers. The sides are made from the same curd mass, hardens quickly and keeps its shape.
