We clear it of scales and take a strong, sharp knife.

very carefully cut it along the ridge on both sides, break off the ribs with the tip of a knife, gradually separating the ridge from the carcass. (caviar or milk, we don’t throw away the liver)

and in the meantime, let’s take care of the vegetables and caviar, cut everything finely, add salt, taking into account that we have already salted the carcass a little, add butter in cubes

and we prepare the baking tray ourselves, grease it with oil, put baking paper and again with oil

Place the carcass on a baking sheet and vegetables on one half
