Once I tried the basics of Tatar and immediately fell in love with this dish. Today I prepared it for lunch, using the recipe for basic Tatar with potatoes as a basis. I used pork instead of beef. I fried the meat, onions, and carrots in a frying pan one by one, then added the tomato and pickled cucumbers. I fried the potatoes in a separate pan. I cooked it without closing the lid at first. Then, when the potatoes have “set” a little, put it under the lid. I brought it to half-cookedness, then put it in a frying pan with meat and vegetables. I added a little water and simmered until done. The azu turned out great! The meat was stewed well, it became soft and aromatic, and the vegetables were also cooked through.
