To prepare roast pork, you need to choose from two recipes: with pre-frying in a frying pan (if the dish is baked in the oven) or without it. The meat cut into pieces is fried with the addition of onions and salt until an appetizing crust. You can do the same with potatoes. Without frying, the products are simply laid out in the dishes in layers or mixed. A small amount of water is poured. In order for the roast to be properly saturated with its own juices and aromas, it is covered with a lid on top. Instead of a lid, you can make a cheese or flour “cap”. The first is a layer of coarsely grated cheese. The second is hard unleavened dough, rolled into a layer at least 5 mm wide.
Tips and tricks:
The ideal meat for this dish is pork tenderloin. Pre-frying the meat with onions in oil will add juiciness and flavor to the roast. It is better to fry the pork if raw potatoes are added to the dish.
