Pancakes
To achieve a “medium” size, it is advisable to get a separate small frying pan, or use a regular frying pan, but pour only a quarter cup of dough in the center and fry individually. Pancakes should be fried on a dry surface, pouring oil only into the dough. But for the first portion, you can lightly grease the bottom. You need to turn the pancake over when “craters” are created on the top side and get the widest spatula possible. How to fluff the dough to make it airy and porous? Do pancake recipes use baking powder or baking soda - slaked or without vinegar? 1) It is better to always add baking powder for any baking - it is a neutral product. 2) Pure soda can be used if the dough contains acid: honey, berry juices, kefir, sour cream, buttermilk, fermented baked milk, other fermented milk products - then the correct reaction will occur and bubbles will form. 3) You can only extinguish soda for milk, because it does not have its own acidity.
