STEP 1

How to make PP banana pancakes? Prepare your food. Choose a ripe, soft banana. It is better to focus on the indicated weight - 210 grams; with a large amount, the pancakes may not bake. You may need more or less rice flour than indicated in the ingredients, depending on the consistency of the dough. STEP 2

Peel the banana, then break it into pieces in a bowl. Mash these pieces with a fork until pureed. Therefore, it is better for the banana to be very ripe - such a fruit is easier to mash. You can also use an immersion blender, but for me a fork was enough. If there are small pieces of uncrushed banana left in the mixture, it’s okay - they will give an interesting structure to the pancakes.
STEP 3

Beat the egg into a bowl with the banana puree, pour in the milk, and add a small pinch of salt. Stir with a fork until smooth.
STEP 4

Add baking powder to rice flour. Stir until evenly distributed throughout the flour.
STEP 5

Start adding flour to the banana mixture in portions. Stir the dough with a fork after each addition. Stop when it becomes the consistency of thick sour cream. I used less flour. It depends on the weight and ripeness of the banana, the size of the egg, the properties of the flour, etc.
STEP 6

Heat a non-stick pancake pan over medium heat - this is important as the pancakes are fried without oil. Place a tablespoon of dough in the center, carefully level it, forming a pancake about 1 cm thick. For how to choose the right pan, read the link in the article at the end of the recipe.
STEP 7

Fry the pancake until golden brown, a couple of minutes, then flip it over to the other side.
STEP 8

Remove the finished pancake to a plate. Fry pancakes using all the dough in the same way. I got exactly 6 pieces from this quantity.
STEP 9

Serve banana pancakes with rice flour. Bon appetit!
