For breakfast, I fried banana pancakes for the children without milk or sugar. An amazingly simple recipe, the ingredients are affordable and it takes minimal time! For the test, I took very ripe bananas, which a little more and spots will appear. Their flesh is soft and sweet; no sugar is needed. I mashed them with a puree masher. Mixed in the eggs and flour with a whisk. Added half a teaspoon of baking powder for fluffiness. The dough turned out similar to good thick condensed milk. Before baking, I decided to experiment and add vegetable oil to the dough and fry in a dry frying pan. The experiment was a success, although I had my doubts). The pancakes baked perfectly in a non-stick pan and did not stick. From this amount of ingredients I got 12 small pancakes. They smell amazing like ripe bananas! Very tasty, soft, light! The children asked to prepare another portion).

I beat the banana with the egg in a blender, but apparently I didn’t try, because... lumps remained. I tried a small piece of banana, and it turned out to be sweet, despite the fact that it was not ripe enough. So I added lemon juice (deja vu, I've been guilty of attributing it to it a lot lately in baking). The recipe is quite simple, so it would be inappropriate to describe every step here. It’s better to say that the structure is very delicate, and this is captivating. I will cook more. Thanks to the author)
