    To prepare the dough, take a comfortable deep bowl and combine all the liquid ingredients in it - eggs, milk and vegetable oil. Mix them a little with a whisk.

    Then add the dry ingredients mixture - salt, sugar, baking powder and most of the flour. Leave a little flour so you can track the desired consistency of the dough later.

    Knead the dough with a whisk so that there are no lumps of flour. It should be like thick sour cream. Here, add more flour if necessary. Focus on the consistency of the finished dough.

    Let's start baking pancakes. For frying, use the smallest frying pan. I have a frying pan only 15 cm. Heat it up a little and grease it with vegetable oil before the first pancake. Then fry in a dry frying pan. Pour a little dough onto it, approximately 5-6 mm thick. Fry over low heat for 3-5 minutes on one side and 1-2 minutes on the other. Pancakes turn out tender and airy in such a frying pan.

    If you use a large frying pan, I recommend making the dough thicker by adding about 50-100 g of flour, otherwise the dough will spread over the surface and the pancakes will not turn out so fluffy. Ready-made pancakes are very tasty when served hot. Pour any berry syrup over them and serve. Enjoy your meal!

Julia, thank you for the good pancake recipe! I always make pancakes, pancakes, etc. “by eye,” but since I started cooking according to the recipe, I measured the ingredients on the scales. The pancakes turned out tender, airy, fluffy. Everyone at home liked it, I’m putting it in my piggy bank!) By the way, I want to emphasize for everyone who loves fluffy pancakes and for some reason it doesn’t work out for them: a small frying pan is almost decisive in baking pancakes. If the diameter of the frying pan is small, then you can make a king-pancake like the one in the photo. Of course, this won’t work in a large frying pan. No matter how hard you try, the pancakes will be flatter (but you can and should experiment with the amount of flour!).
