Classic pancakes with milk and baking powder

Step-by-step preparation
STEP 1
Prepare all the products, take premium or first grade flour. It is better to separate the yolks from the whites in advance and put the whites in the refrigerator to cool.
STEP 2
Sift wheat flour into a suitable sized bowl to enrich it with oxygen and make it more airy. Mix flour with sugar, baking powder. Add milk and raw egg yolks. Mix everything thoroughly until a homogeneous mass is formed.
STEP 3
In a separate bowl, beat the chilled egg whites with a mixer at high speed. You should get a fluffy foam.
STEP 4
Now add the whipped whites to the dough one tablespoon at a time, mixing from bottom to top. Before your eyes, the dough will begin to change its structure and become lighter and airier. The consistency will be similar to whipped sour cream.
STEP 5
Add 2 tablespoons of vegetable oil to the dough and mix lightly.
STEP 6
Heat a frying pan on the stove. Grease it with a thin layer of vegetable oil - only 1 time, for the first portion of pancakes. Pour the batter into the hot pan with a spoon and fry the pancakes on both sides. Continue frying the entire dough without oil. Ideally, of course, do this in a non-stick frying pan. But any heavy frying pan will do.
STEP 7
Don't forget to turn the pancakes on time. Pancakes turn out fluffy, tall and completely dry - like biscuit dough.
STEP 8
According to the classic recipe, they should be served by stacking them on a plate and pouring maple syrup, honey or chocolate sauce on top. But you can use jam, jam, sour cream. Personally, I like to eat them even without any watering :)))
