Minced meat for chopped cutlets is prepared without the use of a meat grinder, food processor or blender - this is the main difference. Only handmade, finely cutting thin strips of meat about 5 mm wide with a very sharp knife. The thinner the slice, the juicier the dish will be.

To make the fillet easier to cut, you can keep it in the freezer. Some people like the meat pieces to be clearly felt when chewing, in which case the fillet is cut larger - about 1 cm. And so that the mass holds its shape well and does not fall apart, the finished mixture must be marinated longer and more thickeners added. Any type of sirloin meat is suitable: beef, chicken, turkey or other poultry, pork, lamb, rabbit. Recipes for chopped cutlets are somewhat different from preparing the usual ground ones:

- The list of ingredients can be much wider. With 500 grams of meat, the same number of additional products are mixed. The composition is multi-component. In addition to the usual onions, bread crumb and eggs, mayonnaise, flour, starch, semolina, hard cheese, cream, various greens, yogurt, carrots, apples, kefir are added to chopped cutlets... These products are needed for juiciness and holding together. - Let the finished minced meat sit in the refrigerator for at least two hours or leave overnight. - Do not bread the mixture, place the mixture in a tablespoon in a frying pan and fry until golden brown.
