    Wash the fillet, remove excess fat and films if necessary, and dry with paper towels. Chop the meat very finely with a knife.

    Wash the onion, peel and cut into small cubes. To prevent onion juice from irritating the mucous membranes of the eyes when slicing, I advise you to rinse the knife and onion with cold water.

    In a deep bowl, combine chopped chicken fillet, onion, mayonnaise, beat the egg into the mixture and add salt. Mix thoroughly.

    Add a spoonful of breadcrumbs to the mixture for viscosity and knead the minced meat well.

    Pour the flour into a container convenient for breading (I used cling film for this purpose). Form into cutlets and roll in flour.

    Heat a frying pan and add oil for frying. You can tell that the oil is hot enough by lowering a spatula into it. If bubbles gather around the shoulder blade, it's time to start frying the cutlets. Place the flour-breaded cutlets on the frying pan (not too crowded). Fry on one side until browned, about 3-4 minutes. I indicate approximate times, since everyone’s household appliances and frying pans are different.

I decided to make minced chicken cutlets with mayonnaise from chicken breast. It’s easier to finely chop a small amount of minced meat by hand without using a meat grinder, but the taste of minced meat products is different for the better (I think so))). I mixed all the ingredients, added salt to taste (and ground black pepper if desired), formed small cutlets, rolled them in flour and fried them in a frying pan on both sides, and also, according to the author’s advice, stewed them a little under the lid with the addition of a small amount of water. The cutlets turned out very tasty, tender, juicy. We ate them with fresh vegetables, without waiting for the side dish))). Thanks for the recipe, Maria!
