Chopped chicken breast cutlets with starch and mayonnaise

Step-by-step preparation
STEP 1
Cut the chicken fillet (breast) into small pieces - the smaller the better, as the cutlets will come out more tender and juicy. If your chicken breast is frozen, you must first defrost and dry it.
STEP 2
Peel the onion and chop finely. It is better to use white onions, not purple ones, so that the cutlets do not turn out with a bluish tint.
STEP 3
Pour chicken meat and onions into a bowl of a suitable size, beat in an egg, add mayonnaise, add starch and salt. At this stage, you can also add seasonings to taste and chopped fresh dill.
STEP 4
Mix everything thoroughly with a fork. It turns out to be liquid minced meat.
STEP 5
In a frying pan, heat 2 tablespoons of refined vegetable oil for the first batch of cutlets. There is no need to pour more oil so that the cutlets do not come out greasy, plus they will still release juice. When the oil is hot, add one tablespoon of minced meat at a time, forming round cakes. Moderate heat Fry for 4-5 minutes until browned.
STEP 6
Turn the cutlets over to the other side and fry for another 4-5 minutes until completely cooked. Chicken meat cooks quickly - this time is enough for the cutlets to cook well. There is no need to extinguish them additionally. Before the next batch, add a couple more tablespoons of oil to the pan and heat it up. Use all the minced meat. I made three batches in a small frying pan.
STEP 7
Place the cutlets on a plate. The specified quantity of products will yield 8 medium-sized cutlets.
