STEP 1

STEP 2
Sterilize the jars. First, wash the soda cans. I do this in the oven, put them upside down in a cold oven, preheat the oven to 150°C and sterilize 0.5 l jars - 10 min, 1 l - 15 min. STEP 3
Peel the onion and cut into quarters of rings. Wash the carrots in running water with a brush, peel and grate on a coarse grater. Heat a small amount of oil in a frying pan, add the onions and carrots and fry over medium heat, stirring occasionally until soft. STEP 4
Wash the tomatoes in running water, remove the attachment point to the stalk and cut into small pieces. Add the tomatoes to the onions and carrots, mix and continue to fry for another 10 minutes, stirring occasionally. Wash the zucchini in running water, peel and cut into cubes about 1 cm in size. If you have young zucchini, then you do not need to remove the skin, but for mature fruits It is necessary to remove the middle with hard seeds.
STEP 5
Wash the bell pepper in running water, remove the stem and seeds and cut into pieces. Transfer the fried vegetables into a pan (if your pan is large, you can continue in it). Add zucchini, bell pepper, salt, sugar, hot red pepper, pour in the remaining vegetable oil. Mix well and simmer for 20 minutes, stirring occasionally.
STEP 6
Peel the garlic and cut with a knife. Add garlic, 9% vinegar and tomato paste to the pan. Taste and add salt if necessary. Mix everything and simmer over medium heat, stirring occasionally, for another 25-30 minutes. Also at this stage you can add washed and chopped parsley or dill. I didn't add any greens.
STEP 7
Place the finished salad in dry, clean jars and close with clean lids. Turn them upside down and cover them with a blanket or blanket. Allow the pieces to cool completely. Store the zucchini salad, carrots, bell peppers and onions in a cool place. Bon appetit!
