Finger-licking eggplant salad

- STEP 1 - How to make eggplant salad for the winter Finger licking good? Prepare all the food and wash the vegetables. 
- STEP 2 - Cut the eggplants into cubes, sprinkle them with a tablespoon of salt and leave for 10 minutes. 
- STEP 3 - Cut the pepper into cubes, after removing the seeds and tails. 
- STEP 4 - Peel the carrots and grate on a coarse grater. Rinse the eggplants with water and add carrots to them. 
- STEP 5 - Also add pepper to the eggplants and carrots. 
- STEP 6 - Peel the onion and cut it into quarter rings. Add it to the general pan. Chop the garlic and go there too. 
- STEP 7 - Dice the tomatoes and place them in a common saucepan. Add oil and water. Place the salad on the stove over medium heat. 
- STEP 8 - When the salad boils, add a tablespoon of salt, sugar, vinegar and mix everything well. Let the salad simmer for 10 minutes. 
- STEP 9 - Place the hot salad in sterile jars and close with sterile lids. Turn over, wrap and let cool completely. 
- STEP 10 - Then transfer the salad to storage. It is better to store preserved food in a dark place - this way it will be beautiful and bright. In the light, vegetables lose color and become gray and unappetizing.
