STEP 1

How to make uncle bens from zucchini and tomatoes? Prepare the ingredients for the salad. Choose unscented vegetable oil. It is best to cook this salad in the autumn, when there are a lot of inexpensive local vegetables. It's also the tastiest of the bunch. I prepared a small portion; the amount specified in the recipe will yield about 5 liters of the finished product. The weight of all vegetables is indicated in already peeled form. Wash the vegetables well before cooking.

Peel the zucchini; if they are large, remove the seeds. My seeds were small, I left them. Cut the zucchini into large cubes.

Remove the seeds from the bell pepper and cut into pieces approximately the same size as the zucchini pieces.
STEP 4

Peel the onion and cut into quarter rings.
STEP 5

Cut the tomatoes into halves. Cut out their stems. Cut the tomatoes into arbitrary pieces - we will chop them anyway.
STEP 6

Add salt, sugar and vegetable oil to the tomatoes. Stir. Place the zucchini in the pan.

Place the pan to cook over medium heat.

Wait for it to boil, reduce heat and simmer for 30 minutes.

Then toss the peppers into the salad. Cook for another 15 minutes.
STEP 11

Then add the onion and vinegar, stir and leave on the fire for another 5 minutes. After the allotted time, turn off the fire.
