STEP 1
How to make pancakes from zucchini and potatoes? Prepare your ingredients and start preparing our dish.
STEP 2
Peel the carrots and grate them on a coarse grater - you can grate them on a fine grater, but in this dish I like them better in this form. Purely for aesthetic reasons, this does not affect the taste of the dish in any way.
STEP 3
Wash the zucchini and grate it on a fine grater. Of course, it is best to use young zucchini without seeds; otherwise, the seeds and all the pulp will have to be removed by first cutting the zucchini lengthwise into 2 halves. You also need to peel the potatoes and grate them finely.
STEP 4
Cut the suluguni into straw.
STEP 5
Prepare the dough. To do this, mix all the above ingredients (carrots, zucchini, potatoes and cheese) in a deep and convenient container of a suitable size. Beat 2 eggs, add salt and spices to taste.
STEP 6
Add the sifted flour and mix everything well. We should have a runny dough that can be left to rest for a while. In some cases, I add chopped dill - it won’t hurt in this dish.
STEP 7
Now let's see how to fry zucchini and potato pancakes? To do this, heat the vegetable oil in a frying pan and spoon out the dough in the form of flat cakes. Turn the heat to medium and fry the pieces on one side for about 5-7 minutes. Turn over to the other side, cover the pan with a lid so that the carrots do not remain raw and too crispy, and fry the pancakes until cooked. Remove the first batch from the pan and fry the next one.
STEP 8
Ready pancakes can be placed on a paper towel to remove excess fat. You get a lot of pancakes - enough for several servings!
