STEP 1
How to make a colorful Mediterranean-style salad with squid, cucumber, cheese and bell pepper? Very simple! To begin, prepare the necessary ingredients according to the list. First, prepare the dressing. You can use any mustard - Dijon, Russian or granular. Oil - any vegetable oil. I have olive.
STEP 2
In a bowl, combine liquid honey, olive oil, lemon juice, mustard and spices. Beat everything thoroughly with a fork until smooth. If your honey is heavily sugared, melt it.
STEP 3
Now prepare the rest of the ingredients. You can take squid in the form of whole carcasses with a tail or just tubes for stuffing. Squids already cut into rings are also suitable. You can replace or supplement the composition of vegetables to your taste.
STEP 4
Peel the red onion and cut into thin rings or half rings. Marinate the onion in a mixture of vinegar and sugar for 20 minutes. Then drain the marinade. You can use any vinegar - I used red wine vinegar, but apple, white wine or regular table vinegar 9% will do. In general, whatever you have in your kitchen.
STEP 5
Clean the squid from the skin, chord and entrails. Rinse well. Boil the squid in salted boiling water for 1-2 minutes. Don't cook any longer!!! Otherwise, the squid will become tough as rubber and completely tasteless.
STEP 6
Cool the finished squids, cut into strips or thin rings.
STEP 7
Cut the tomatoes into slices. If you have cherry tomatoes, use halves. Tomatoes need to be juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Cut the cucumber into semicircles or, if it is small in diameter, into circles.
STEP 9
Peel the bell pepper from seeds and stems and cut into strips.
STEP 10
Remove the olives from the brine and dry.
STEP 11
Dry the lettuce leaves and tear them into smaller pieces with your hands. I have two types of salad - regular green and brown-red. You can replace it with a ready-made mixture of lettuce leaves.
STEP 12
In a bowl, combine squid, tomatoes, bell pepper, cucumber, red onion and olives. Pour half of the dressing over the salad and toss gently.
STEP 13
Place the salad on a plate on lettuce leaves. Spread the cream cheese on top with a spoon. Pour the remaining dressing on top. Bon appetit!
