STEP 1

How to make a salad with shrimp, mango, avocado and arugula? Very simple! To begin, prepare all the necessary ingredients according to the list. It’s better to start by preparing the dressing.

In a bowl, combine vegetable oil, lemon juice, liquid honey, lemon zest, salt and pepper. Beat everything thoroughly with a fork. If the honey is already candied, you can melt it in the microwave or in a water bath and cool.
STEP 3

Now start preparing the main ingredients of the salad. The most important thing is to choose the right mango and avocado. The mango should not be hard, but not very soft either. When pressed, slightly spring back. A ripe fruit emits a quite noticeable aroma. The avocado should also not be too soft, the skin should not collapse when pressed, but should spring back.
STEP 4

Boil the shrimp in boiling salted water for 2-3 minutes. In the ingredients, the weight of the shrimp is given in peeled form, so buy them with a reserve.
STEP 5

Then cool and remove the shell. You can choose any shrimp you like - large or small. I have king prawns.
STEP 6

Wash and dry the arugula. Instead of arugula, you can use a ready-made mixture of lettuce leaves, for example Tuscany.
STEP 7

I advise you to rinse the walnuts thoroughly (chemicals are applied to them so that they can be stored longer), and then bake them in a dry frying pan.
STEP 8

Peel the mango, cut in half, remove the pit. Cut the pulp into slices.
STEP 9

Cut the avocado in half, remove the pit and peel the skin. Cut the pulp into small slices. Immediately sprinkle the avocado with lemon juice to prevent it from browning. Young avocados do not darken as quickly as those that have been sitting for a long time. Therefore, it is better to cut the avocado last, after preparing all the other ingredients, so that you can immediately add them to the salad.
STEP 10

Place arugula, shrimp, avocado and mango slices and walnuts on a plate. Pour the dressing over the salad and serve immediately. Bon appetit!
