I was interested in the recipe for Quiche Lauren with chicken; I have never made a savory pie from such dough before. It became all the more interesting to try. I crushed the flour and butter into crumbs, added the egg and water, and kneaded the dough. It mixes interestingly, at first the flakes don’t want to come together in any way, and then it turns out to be one dense elastic ball. I refrigerate it while I make the pie filling. I didn’t have chicken fillet, but I did have minced meat. This is what I use for the filling. Fry it in a frying pan in oil with onions, add cream, simmer for a while, add salt. I rolled out the dough to the size of the mold and placed the minced meat filling on it. In a separate bowl, beat the egg with sour cream and pour it over the filling. It felt like the amount of the indicated ingredients would definitely be less or more, suddenly something would be missing, or there would be too much of something. But no, everything turned out to be just right and fit into one form. Sprinkled grated cheese on top and put it in the oven. My oven is very capricious, and the pan is quite thin, so I baked it over low heat, placing the rack with the pan almost at the very top, otherwise the bottom will burn and the top will not brown. Quiche Lauren took almost an hour to bake and turned out very tasty. The shortbread dough was soaked with a juicy filling, the cheese gave an appetizing crust. This is a wonderful recipe for a teatime snack.

I sprinkled some herbs on top of the pie (it's not in the recipe). In our family, greens are added to almost any dish: soup, sprinkled on side dishes, meat, etc. We're so used to it. Therefore, when I decided to bake a pie, I decided not to break family traditions. Thanks to the author for the detailed photo recipe. I succeeded! When I did it for the first time, I was very worried that it wouldn’t work. The result was a very tasty Quiche. The family appreciated it and asked me to repeat it!
