You can take pork from any part of the carcass (ham, tenderloin, carb, neck, etc.). I have a ham. You can replace or supplement the vegetable part to your taste.

    Wash the pork and dry it. Cut into cubes approximately 3cm wide.

If you want the sauce to be thick, you can add 1 tsp to it. starch and stir so that there are no lumps.

    Heat the butter in a frying pan. Add the pork and, stirring, fry over high heat until golden brown.

    Place the prepared vegetables in the duckling pan. There is no need to additionally lubricate the duckling pan.

    Top the meat and vegetables with diluted tomato sauce. Salt and pepper everything to taste. Add bay leaf.

    Cover the duckling with a lid and place in an oven preheated to 180°C for 1.5 hours. 10-15 minutes before the end of cooking, reduce the temperature to 150°C.

I had a piece of pork from the hind leg, it was tough meat, I still didn’t know how to cook it) This recipe caught my eye: Potatoes with meat in a duck stew stewed in the oven and it immediately became clear that this way the meat would definitely soften. Pre-frying in butter made it more tender. I went a little overboard with the potatoes) I have the same glass duck dish, but the vegetables didn’t want to fit in it) I had to use a rectangular glass mold, which I then covered with a double layer of foil and pinched well on all sides. I baked it according to the recipe and didn’t change anything. Then I took off the foil and saw this miracle! This dish looks amazing; baking it covered did not affect the brightness of the vegetables. I also added a handful of frozen peas for a variety of colors, and they stayed the same color too. The carrots were so sweet and flavorful while still being slightly crunchy, baking didn't make them too soft. The potatoes are very tasty and tender. And the meat, as I expected, was saturated with juices and became very soft, easily flaky. The tomato sauce also came in handy, the color is beautiful and the taste is interesting.
