Insanely delicious potato quiche with vegetables and ham! Potato quiche is a very tasty, aromatic and tender dish, the basis of which is potatoes, something between a casserole and a pie, but cannot be called either one or the other. The dish is very simple to prepare, the ingredients are accessible and always on hand, and it turns out very tasty. None of the household members will refuse a portion of potato quiche; the taste is familiar and pleasant to everyone. This is a great option for lunch or dinner for the whole family.

    Let's prepare the ingredients. Let's start with potatoes. Wash the potatoes, peel and cut into thin slices.

    Grease the mold with vegetable oil, sprinkle the bottom and sides with breadcrumbs. Place the potatoes on the bottom of the pan, making sides out of some of the circles. Salt and pepper the potatoes, you can drizzle with olive oil. And put it in the oven, preheated to 180 degrees for 15 minutes.

    Meanwhile, prepare other ingredients. Beat two chicken eggs into a deep bowl. Beat them with a fork until smooth. Add cream to the eggs; as a lower-calorie product, you can use milk instead of cream. But with cream the dish will be denser and, of course, tastier. Add salt and freshly ground black pepper to taste. Mix.

    Cut the ham into thin strips.

    Cut the tomatoes into small cubes. You can alternatively use cherry tomatoes by cutting them into halves only and placing them on the surface of the dish.

    Wash the green onions (feather) well and chop finely.

    Grate hard cheese on a coarse grater.

    Add the prepared ham, onions, tomatoes and cheese to the bowl with the creamy egg mixture. Mix well.

    We take our potatoes out of the oven (do not turn off the oven). It should become soft and slightly browned.

    Place the prepared mixture on it, spreading it evenly over the surface. Place the dish back in the preheated oven and bake at 180 degrees for about 20 minutes, until golden brown.

    Remove the finished potato quiche from the oven, let it cool slightly and serve. Can be cut into portions or cooked and served in portion forms. Just before serving, sprinkle with chopped fresh green onions. If desired, you can serve potato quiche with sauce, mayonnaise or ketchup. Bon appetit!

In the evening I made potato quiche for dinner. It took little time, but the result pleased me. All my household members unanimously decided that this was pizza) I didn’t really have time to photograph the finished dish, it was literally stolen from under my hands! I made the quiche in a wide glass mold. For the base, I took three medium potatoes and cut them thin. The question arose: to rinse or not? I decided that there was no need to rinse so that the slices would “stick together” better. I laid them out in an overlapping pattern, sprinkled them with spices and baked them for 20 minutes. For the filling I used sausages and bacon instead of ham. Frozen tomatoes, poured hot water over them to melt. I did not salt the filling, because the products included in it are already salty. Then I spread the filling onto the potatoes and baked for another 25 minutes. The egg-cream mixture dripped onto the potatoes and formed a real “casserole” base. And the filling was baked on top. The result was an incredibly tasty and aromatic potato quiche! I think you can still experiment with fillings. When cut, the pieces do not fall apart when hot, this is a big plus.
