    How to make a kebab in a roasting sleeve on an onion bed in the oven from pork? Prepare your ingredients. For barbecue it is better to use pork neck or ham. They contain a lot of pulp, but there are also layers of fat, thanks to which the meat will retain its juiciness and not dry out. Pork can be replaced with other meat of your choice, but in this case the baking time may change. It would work well with chicken or turkey. Half an orange can be replaced with one lemon.

    Cut the orange into slices. My orange was very small, so I used it whole.

    Peel the onion and cut into half rings. Use your hands to crush the onion so that it releases its juice.

    Wash the pork, dry it and cut into medium portions.

    Place pork, lemon, a handful of chopped onions, tomato paste and barbecue spices in a bowl. Mix everything thoroughly. Leave the meat to marinate for 1 hour at room temperature.

    Use the remaining onions to make an onion pillow. Pour boiling water over it and let stand for 10 minutes. Then drain the water. Add vinegar, sugar and salt to the onion. Stir and leave to marinate for 40-50 minutes.

    Turn on the oven at 200 degrees. Tie the baking sleeve on one side. Place the pickled onion in the sleeve and smooth it out. The onion pillow is ready.

    Distribute marinated meat with onion and orange on top.

    Tie the baking sleeve on the other side. Make several punctures on top with a knife or scissors to allow steam to escape.

    Bake the kebab in an oven preheated to 200°C for about 50 minutes. Then cut the sleeve on top, uncover and bake the meat for about 10 minutes until golden brown. This recipe turned out to be an excellent kebab. Although there is no characteristic smoky smell of kebab, the pieces of meat baked on a bed of pickled onions acquired a kebab-like taste. We took pork neck, the meat was so tender that you could eat it with your lips. 20 minutes before the end of cooking, I cut the bag and placed the baking sheet under the upper grill. The result was a fried crust, and my husband especially appreciated the fried lemons soaked in meat juices. The recipe is very detailed, looking at the beautiful photographs it is a pleasure to cook using it. Many thanks to the author for a delicious dinner!
