    How to bake a whole rabbit in the oven? Prepare your food. Take a rabbit that is not very large - the optimal weight is about 1.5 kg. The greens can be any you like. In winter, it is quite possible to replace fresh herbs with dried ones. Sour cream is suitable, not very fatty, 10-15%.

    Rabbit meat, although very healthy, has a specific taste. To get rid of it, I recommend soaking the carcass in cold water for 5-7 hours. You can also add 1 teaspoon of 9% table vinegar to the water for soaking - then there will be no trace of foreign odor.

    First of all, turn on the oven at 180 degrees so that it has time to warm up to the desired temperature - preparing the rabbit will not take much time. For baking, you will need a heat-resistant form of a fairly large size so that the whole carcass fits. Dry the rabbit, salt the outside and inside, and place in a baking dish.

    Lightly salt the sour cream and add mustard. It can be regular mustard, Dijon or grain mustard - choose to your taste.

    Chop the garlic and add to the sour cream. You can also grate the garlic or pass it through a press.

    Wash the dill, dry it, chop it with scissors or a knife. Add to sour cream and stir until smooth.

    Generously coat the rabbit with a little sour cream inside and on top.

    If you prefer crispier meat, bake the rabbit for 1.5 hours, then remove the sleeve (foil) and cook until crispy for another 30 minutes.

My husband found a rabbit carcass somewhere and brought it home, but I never cooked it. I'm not even sure that I've ever eaten rabbit meat. I found a recipe on the website for a whole baked rabbit in the oven. I had some sour cream left, so I added mayonnaise to it. According to the author’s advice, I soaked the carcass for five hours. I baked the rabbit in a cast iron duck pot for two hours. The meat turned out very soft, tender, juicy. Its structure resembles chicken, but it has its own taste, unlike anything else.
