STEP 1

For hummus, wash the chickpeas thoroughly and soak for 6 - 12 hours (depending on the quality of the chickpeas). First, fill the chickpeas with warm water. When it cools down, drain it and fill it with water at about 60 degrees. This will make the peas swell faster.
STEP 2

After the time has passed, the chickpeas should be washed and boiled in double the volume of water. If you cook in a slow cooker, then 1-1.5 hours will be enough. The peas should be 80% done.
STEP 3

Making Pitta cake. Mix flour with salt and caraway seeds.
STEP 4

Add oil and rub with your hands. Add water in small quantities. Knead the dough. You should get a ball that will stick a little to your hands. Wrap the dough in film and leave it in the refrigerator for 20-30 minutes.
STEP 5

Preheat the oven to maximum. At this time we take out the dough. It needs to be kneaded a little without flour and divided into small balls. Roll out each ball thinly on a floured table.
STEP 6

Place in the oven. Bake on a wire rack in the lowest position for 5 minutes. The cakes should puff up. Ready!
STEP 7

Dip the boiled chickpeas while hot into a container of cold water and, grinding, remove the shell.
STEP 8

Remove clean chickpeas and puree in a blender until smooth.
STEP 9

Add a little water (in portions) in which the peas were cooked until the consistency of sour cream is reached.
STEP 10

Next, add tahini, cumin, paprika, garlic, juice of half a lemon, olive oil, cayenne pepper, and salt.
STEP 11

Continue grinding with a blender. Let's try. If necessary, you can add any of the seasonings. Ready!
