A flat round bakery product is usually called a flatbread. In some countries of the world it is still used instead of the usual bread or loaf. It can be fresh, rich, whole, with filling inside or outside. And they knead flatbreads using different types of dough, yeast, puff pastry, shortbread, biscuit, with or without fillers.
In some national cuisines, flatbreads have become a special, easily recognizable product. And you can’t even tell by their appearance that they are actually flatbreads. These include Georgian khachapuri, Italian pizza and focaccia, and Mexican tortilla. Some of these “national flatbreads” are far from round in shape - Arabic thin pita bread is baked in the form of a rectangular layer, and some flatbreads are made triangular or completely shapeless.
The simplest flatbreads are baked in water with flour and salt. And more complex ones are prepared with the addition of a variety of products, from eggs, milk, cream, butter to all kinds of vegetables, mushrooms, cheese, herbs, and meat. When baking, you don’t limit yourself to one flatbread - they are prepared in several pieces. Additives in the form of herbs, spices, seasonings, chopped vegetables, mushrooms, meat, and cheese are also added to the dough. In addition to wheat, flatbreads are prepared with corn, rice, rye and other types of flour.
Oven-baked flatbreads differ from pan-fried ones, except that they are less fatty - they do not require oil for frying. And if you cook them with yeast, you get fluffy, airy cakes. With a minimum of effort and a little imagination, you can use ordinary flatbread dough to make a lot of baked goods with very different tastes and compositions. And serve it instead of bread or as a snack.
