  1. STEP 1

    STEP 1

How to bake khachapuri from puff pastry with cheese in the oven? Prepare all the necessary ingredients.

  2. STEP 2

    STEP 2

How to make puff pastry for khachapuri? Sift the flour through a sieve into a deep bowl, put the margarine cut into pieces (or you can melt it slightly). I melted the margarine in the microwave.

  3. STEP 3

    STEP 3

Dissolve salt in cold water. Beat two eggs in a separate bowl and add them to the water, then pour in the vinegar and mix everything. Wash the eggs first so that they are free from contamination.

  4. STEP 4

    STEP 4

Pour the liquid into the flour and margarine, quickly knead into a smooth and shiny dough, adding water or flour if necessary. Remember that you may need less or more flour than indicated; you can read more about this in the article on the properties of flour, a link to it is at the end of the recipe.

  5. STEP 5

    STEP 5

Wrap the dough in plastic wrap and refrigerate for several hours.

  6. STEP 6

    STEP 6

How to make filling for khachapuri? Take the cheese and grate it on a coarse grater. You can use any cheese, as long as it is natural, fresh and without milk fat substitutes. Add cottage cheese to the cheese and mix them well.

  7. STEP 7

    STEP 7

Beat 1 egg into the cottage cheese with cheese, add a little salt if necessary and stir everything well until smooth.

  8. STEP 8

    STEP 8

Roll out the dough thinly and cut into squares.

  9. STEP 9

    STEP 9

Place the filling on the squares as shown in the photo.

  10. STEP 10

    STEP 10

Fold one end of the dough over to form a triangle. Press down the filling lightly to allow air to escape, tightly connect the edges of the triangle and make punctures in several places with a fork to allow air to escape during baking.

  11. STEP 11

    STEP 11

Grease a baking sheet with oil or cover it with parchment paper and lay out our preparations. To make the khachapuri golden brown, brush the top with beaten egg. Place the baking sheet in the oven preheated to 200°C and bake for about 20-25 minutes. Your baking time and temperature may vary. You can read more about the operating features of different ovens in the article about ovens. The link is at the end of the recipe.

  12. STEP 12

    STEP 12

    Puff khachapuri is ready!

  13. STEP 13

    STEP 13

Bring your family to the table!

  14. STEP 14

    STEP 14

    Bon appetit!

Thanks for the interesting option. I haven’t made khachapuri from puff pastry yet. I usually bake it from yeast dough with suluguni filling.

Oh, and I cook this dish with thin pita bread instead of dough when I need dinner urgently!)) Very quickly and everyone is happy

Here are the step-by-step photos. I added finely chopped herbs to the filling. The cottage cheese was slightly sour, so it turned out to be a delicious salty and sour filling. The dough will be elastic and easy to mold. I recommend this recipe to everyone!

Vera, the khachapuriki turned out very beautiful. I also really love this kind of pastry, but instead of hard cheese, I often add mozzarella or suluguni and a lot of greens to the cottage cheese filling, although I read somewhere that in the original khachapuri they don’t add greens :)

Thank you, Irisha. In our home, cottage cheese is often prepared as a sweet filling or component of sweet pastries. I don’t know about adding greens to khachapuri, but since the author of the recipe did not include them in the ingredients, it means no greens. This is my "gag".
