STEP 1
How to make Adjarian-style khachapuri with cottage cheese without yeast? Prepare the ingredients. This quantity is designed for two large khachapuri. I prepared one serving. I advise you to take small eggs, my C0 did not fit into the boat. Suluguni cheese is traditionally used, but if you only have regular cheese, then take it. To further reduce the calorie content of the dish, you can replace wheat flour with rice flour. Preheat the oven to 200°C.
STEP 2
Take a bowl, put cottage cheese, egg and flour in it. Add a pinch of salt. Take natural, high-quality cottage cheese. Read about how to choose cottage cheese for the dough in a separate article, link at the end of the recipe.
STEP 3
Mix all ingredients with a fork. The dough should be quite thick. I had very liquid cottage cheese and a large egg, my dough came out runny. It was harder to shape, it took longer to bake, it was a little blurry, but it still turned out very tasty.
STEP 4
Take a baking sheet and cover it with parchment. You can choose the right parchment paper by reading a separate article about the features of parchment, the link is at the end of the recipe. Place the dough on the parchment. Form it into a boat with sides. It is more convenient to do this with wet hands. Place a baking sheet with a boat in a preheated oven for 10-15 minutes. STEP 5
While the base is baking, grate the cheese on a fine grater.
STEP 6
The dough should bake until golden brown. Mine took about 25 minutes. So focus better on appearance. Remove the baking sheet with the base from the oven, do not turn off the oven. Place grated cheese in the middle of the boat. Return the pan to the oven.
STEP 7
Wait for the cheese to melt, it took me about 5 minutes. Remove the pan again.
STEP 8
Using a fork, make an indentation in the center of the cheese in the shape of an yolk. Pour the egg in there. It will be more convenient to first break it into a separate cup. Since the sides of the boat were blurry, and the egg was a bit large, the white couldn’t fit. For neatness, I transferred the yolk with a spoon.
STEP 9
Place the baking sheet with khachapuri back in the oven. Wait until the whites turn white. The yolk should just set on top. Remove the khachapuri from the oven and serve immediately. People eat khachapuri by breaking off a piece of dough with cheese and dipping it into the spread yolk. Bon appetit!
