    In a separate bowl, beat a raw egg with a fork. Add salt and sugar to the bowl with kefir. Pour in 2 tablespoons of vegetable oil and beaten egg. Mix everything with a whisk.

    Begin to gradually add flour sifted through a strainer, stirring the dough. You can combine these processes by simultaneously pouring and sifting the flour.

    Mix everything well until smooth. Do not add all the flour at once, add it in parts. Please note that you may use more or less flour than I did. Focus on the consistency of the dough.

    The dough should come together into a ball and come away from the sides of the bowl. At the same time, it will be sticky and watery. We don't touch it with our hands. Leave the dough in the bowl to rest for 10 minutes. You can cover it with a towel or cling film.

    Now start forming the cakes. Sift a small amount of flour onto the table, a spoon is enough. Grease your hands with vegetable oil and pinch off the dough piece by piece. This will be about 4 parts. These will make 4 small cakes with a diameter of 12 centimeters. If you want to make large cakes, then you will get fewer of them - two or three. Form round cakes from the dough according to the diameter of your frying pan.

    Place a frying pan on the stove, pour vegetable oil into it and heat it. Place the tortilla in the pan and fry it over medium heat on one side for about 5 minutes. The dough will be covered with bubbles and rise well. I used a small cast iron skillet that was just the right diameter for my little tortillas.

    Flip the tortilla over to the other side and cook for about 5 minutes more. Prepare the remaining tortillas in the same way. They should brown well and become fluffy. There is no need to transfer them to a napkin, as they are not saturated with oil. Serve the finished flatbreads with sour cream.

Lush kefir flatbreads in a frying pan are good for a snack. I made a double batch at once. With the specified amount of flour, my dough did not come together into a lump and continued to stick to the walls of the bowl. But I didn’t want the cakes to turn out too hard from excess flour, so I scooped up the dough with a tablespoon, put it on a work surface well sprinkled with sifted flour, sprinkled some flour on top, and then pressed it with my fingers, forming the desired shape and thickness of the cake. I didn’t lubricate my hands with anything; the floured cakes didn’t stick to my fingers. With this dough and forming method, the cakes turn out to be very tender, you need to get used to carefully transferring them to the frying pan (it is advisable to make them close to the stove), so it is better to make them small. I got cakes about 16 cm in diameter. I fried it in a frying pan with the lid closed in a large amount of oil for about 2 minutes on each side (the time depended on the thickness of each flatbread). The flatbreads really rise and bubble beautifully in the pan. They turn out very soft and tasty. They can be eaten instead of bread, and are especially suitable for first courses. I liked eating flatbreads with tomatoes, I recommend it!
