STEP 1
How to make a pie with potatoes and mushrooms in the oven? Measure out the required ingredients for the dough. Milk of any fat content is suitable. It needs to be slightly warmed up. Take odorless vegetable oil.
STEP 2
Combine yeast in a bowl, 1 tsp. sugar and about 50 ml of warm milk. Stir. In warm liquid, the yeast will begin to work faster and more efficiently. Leave the mixture for 10-15 minutes until a foamy “cap” appears on the surface.
STEP 3
Sift the flour through a sieve. The flour will be enriched with oxygen, the dough will rise better, and the baked goods will turn out fluffy.
STEP 4
Melt the butter in the microwave or melt it over low heat on the stove.
STEP 5
In a large bowl with high sides, beat the egg with salt and sugar until smooth.
STEP 6
Pour in the rest of the warm milk and stir.
STEP 7
Add activated yeast, stir.
STEP 8
Pour vegetable oil and melted non-hot butter into the resulting mass, stir.
STEP 9
Pour sifted flour into the liquid mixture. Do not add all the flour at once, as you may need less than indicated in the recipe. Mix the dough first with a spoon.

Add the rest of the flour in small portions, stirring the dough each time. Do not add a lot of flour so that the dough does not turn out stiff and heavy.
STEP 11
Knead a soft, homogeneous, pliable dough. Cover the bowl with a towel and leave the dough in a warm place to rise for 70-80 minutes. The time will depend on the air temperature, the activity of the yeast and the density of the dough.
STEP 12
While the dough is rising, prepare the filling.
STEP 13
Place washed and peeled champignons on a kitchen towel to absorb excess liquid. Leave for 15-20 minutes so that all the moisture is absorbed into the fabric. It is important to dry the mushrooms well, otherwise, once saturated with moisture, they will become watery. Cut the mushrooms into slices. If you use wild mushrooms, they must first be boiled in salted water.
STEP 14
Fry the mushrooms in a frying pan with vegetable oil, stirring occasionally, until cooked. While cooking, salt the mushrooms and add ground black pepper if desired. Cool the finished mushrooms.
STEP 15
Boil pre-peeled potatoes in boiling salted water. Drain the water and cool the potatoes. Cut the vegetable into circles or semi-circles if the potatoes are large.
STEP 16
The dough has risen. Its volume increased by 2-2.5 times.
STEP 17
Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into three parts: a larger one for the base of the pie, a smaller one for the top, and I left a little dough for decoration.
STEP 18
Roll out most of the dough into a round layer.
STEP 19
I baked the cake on parchment. If using a baking dish, transfer the dough into the pan and form the sides. Place boiled potato slices on the dough.
STEP 20
Place pieces of butter on the potatoes to make the filling juicier. Distribute the fried mushrooms on top.
STEP 21
Roll out the middle part of the dough and close the filling on top. Pinch the edges of the dough well. Make a hole in the center of the cake to allow steam to escape while baking.
STEP 22
You can cut out decorations for the top of the pie from the remaining dough. Cover the formed cake with a light towel and leave to proof for 20 minutes.
STEP 23
Mix the egg yolk and brush the top of the pie.
STEP 24
Sprinkle the pie with sesame seeds.
STEP 25
Bake the pie in an oven preheated to 180 C for 30-35 minutes until golden brown. If the top is browned but the inside of the pie is not yet baked, cover the top with foil and bake until done. Baking temperature and time may vary. Focus on the operating features of your oven.
STEP 26
Remove the finished pie with potatoes and mushrooms from the oven, cool slightly, cut into pieces and serve. Bon appetit!
