STEP 1

How to make a pie with mushrooms and cheese? Prepare your food. Freeze the butter in advance and cut it into pieces beforehand. Use all natural, high-quality dairy products without vegetable fats. In addition to champignons, any other mushrooms will do.
STEP 2

Prepare the chopped pie dough. How to make the dough? The fastest way to do this is in a food processor or blender. To do this, place pieces of frozen butter into the flour.
STEP 3

Grind everything into crumbs. If you don't have a food processor, rub the butter into the flour with your hands.
STEP 4

Add salt and stir (you can add it in step 2 - I just forgot, but it didn't affect the taste at all).
STEP 5

Now add sour cream to the butter-flour crumbs, stir and knead the dough. There is no need to knead it for a long time, it just needs to be a homogeneous mass.

The dough turns out quite soft and smooth.
STEP 7

Roll out the dough (or just stretch it with your hands) and place it in a mold (mine is 28 cm in diameter), form the sides. Prick the dough with a fork so it will puff up when baking. Place the pan in the freezer (or refrigerator) while you prepare the filling (15-20 minutes).

Prepare the filling. How to make the filling? Wash the mushrooms and dry well. Cut one or two mushrooms into thin slices for decoration.

Cut the remaining mushrooms into cubes.
STEP 10

Peel the onion and also chop it.
STEP 11

Fry the onion in heated vegetable oil for 3-4 minutes until light golden brown.
STEP 12

Add chopped mushrooms.
STEP 13

Fry everything together over low heat until the liquid evaporates (it took me about 10 minutes). Salt and pepper the mushrooms.

Remove the form with the dough from the refrigerator and place in an oven preheated to 200 degrees for 10-15 minutes.

While the pie base is baking, start filling. Take sour cream and flour.
STEP 16

Mix them.
STEP 17

Beat the eggs into this mixture and mix until smooth. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.

Grate the cheese on a coarse grater, put half in the filling, and leave the rest for the top of the pie. Any cheese is suitable for this dish - hard, semi-hard, soft, such as mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well.
STEP 19

Remove the crust from the oven, but do not turn off the heat. Place the mushroom filling on it.
STEP 20

Pour the egg and sour cream filling over the mushrooms.
STEP 21

Sprinkle the remaining cheese on top.
STEP 22

Garnish with mushroom slices.
STEP 23

Bake the pie for another 15-20 minutes until the filling is set and browned on top.
STEP 24

Remove the finished pie from the oven, cool slightly and remove from the pan. Cut into pieces and serve. Bon appetit!
