Pasta with chanterelles in creamy sauce

STEP 1

How to make paste? Before you start cooking, prepare the necessary ingredients. Clean fresh chanterelle mushrooms from forest debris and rinse. If the mushrooms are large, then they need to be cut into 2-3 parts. Boil the mushrooms in boiling water for 10-15 minutes. Then drain the hot water and rinse the mushrooms again. Any type of paste can be used. You can replace it with spaghetti.
STEP 2

Peel the onion and rinse in cold water. Then finely chop the peeled onion.
STEP 3

Heat the frying pan until hot and place finely chopped onions and boiled mushrooms on it. Fry everything together for 5-7 minutes so that all existing moisture evaporates.
STEP 4

Meanwhile, in a separate pan, cook the prepared pasta according to the instructions on the package. Then place it in a colander to allow excess liquid to drain.
STEP 5

Add cream to the chanterelles in the pan and bring everything to a boil. I recommend using heavy cream with at least 33% fat content. Due to the fat content of the cream, the sauce will become thicker. If you have less fatty cream, you can thicken the sauce by mixing cold cream with a small amount of flour.
STEP 6

Add pasta to the hot sauce with chanterelles and mix everything. Place the finished dish on prepared plates and serve hot.
STEP 7

If desired, you can sprinkle the finished dish with a small amount of chopped herbs when serving. Complete the dish with a salad of fresh vegetables. Bon appetit!
