Mushrooms fried with onions can be an excellent appetizer for a holiday feast, a side dish for meat, and an integral part of more complex recipes, such as salads, pies, and stews. Almost all mushrooms can be fried, although many of them require pre-boiling. Exceptions: chanterelles, russula, champignons, oyster mushrooms, etc. If you are 100% sure of the quality of the mushrooms, you can do without this heat treatment. The rest are cooked for about 10-20 minutes, removing any foam that forms. Then they are washed under running water and placed in a frying pan to evaporate excess water. When this is done, add oil and onion, cut into half rings.
There are mushrooms that must be soaked before cooking: boletus, svinushki, for example. Or those that will have to be cooked longer: boletus mushrooms, boletus mushrooms. The main thing is not to overcook, because the mushrooms lose their properties and their taste becomes less intense.
