Take medium sized potatoes. Cheese - soft, Adyghe or feta cheese, of good quality, without vegetable fats. I used cheese.

    First prepare the dough. How to make the dough? Возьмите большую миску. Pour warm kefir into it. It’s okay if you just took it out of the refrigerator - just dilute the kefir with hot water. Pour baking soda into it and stir. Leave the kefir to stand for 5 minutes. During this time, the soda will react with the acid in the kefir. As a result, gas will be released, which will make the dough fluffier and softer.

    Then add salt to the kefir and sift one glass of flour.

    Start kneading the dough with a fork. Once you have added the first cup of flour, sift in a small amount more. So, gradually adding flour, knead the dough.

    Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. It should become homogeneous, smooth and stop sticking to your hands. I only needed two cups of flour, I didn’t need half. Place the finished dough in a bowl, cover with a napkin and leave to rest while the filling is prepared.

    Prepare the filling. How to make the filling? Wash the potatoes and place in a saucepan. Fill with cold water and place on the stove over medium heat. Bring to a boil, reduce heat. Boil the potatoes in their jackets for 20-25 minutes, depending on the size. Determine readiness with a knife - it should easily pierce the tubers. Drain the water and leave the potatoes to cool.

    Cool the potatoes until you can handle them without burning them. Peel it and mash it with a masher until pureed.

    Add grated cheese and sour cream to the mashed potatoes. Add a little salt. Keep in mind that the filling will already contain quite salty cheese, especially if it is feta cheese. You can also add any greens you like to the filling. I decided not to add.

    Meanwhile, the dough became even better - all the liquid was finally absorbed into the flour, and gluten developed in the flour, which is responsible for the elasticity of the dough. Always try to let the kneaded dough rest; it will be much easier to work with. Divide the dough into 8 parts. Roll out each piece on a floured surface into a thin circle.

    Place a frying pan over medium heat. Without lubricating it with anything, heat the pan until hot. Place the flat cake on it.
