STEP 1
How to make potato balls? Prepare your food. You can use any greens you like or not at all. Instead of breadcrumbs, you can use wheat flour as a breading, but then the crust effect will be slightly different. Rusks, by the way, can also be completely different; the final taste of the finished dish will depend on their grinding and taste. You can make them at home yourself, they will be even tastier.
STEP 2
Wash the potatoes thoroughly, peel and place in a saucepan. Fill it with clean cold water and place on high heat. When the water boils, add salt, reduce heat, cover the pan and cook the potatoes until tender, about 25 minutes. Check readiness with a sharp knife - it should easily pierce the tuber. When the potatoes are ready, drain the water and use a potato masher to mash the potatoes. Leave the potato mixture to cool.
STEP 3
At this time, rinse the greens under running water, dry and chop finely. Pour wheat flour into the cooled mashed potatoes, add finely chopped herbs and beat in a chicken egg. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Mix all ingredients very thoroughly until smooth.
STEP 4
Pour breadcrumbs into a plate, place a pastry ring on top, greasing its side walls with a small amount of vegetable oil in advance. With the help of a pastry ring, the balls will turn out even and beautiful. Place the puree with herbs inside the ring, compact it, then carefully remove the ring and sprinkle breadcrumbs on top of the meatball. Or mold them in the usual way, with your hands, just like you make cutlets or cheesecakes.
STEP 5
Pour vegetable oil into a frying pan and place it over medium heat. When the oil is hot, place the formed potato balls in a frying pan and fry them on both sides over medium heat until golden brown. The meatballs are very delicate, so it is better to turn them over with a metal spatula.
STEP 6
Serve the hot meatballs immediately as a separate dish or as a side dish, complementing them with a light vegetable salad. Bon appetit!
