  1. STEP 1

    STEP 1

Prepare the necessary ingredients. Taste the cheese in advance - it should not be too salty, because there is a lot of it in the pie. If the cheese is too salty, reduce the amount in the pie. Otherwise the pie will turn out too salty. In addition to feta cheese, you can use Adyghe cheese or mozzarella.

  2. STEP 2

    STEP 2

Grate the cheese on a coarse grater.

  3. STEP 3

    STEP 3

Also grate the cheese on a coarse grater. The type of cheese can be any - Russian, Creamy, Poshekhonsky, etc.

  4. STEP 4

    STEP 4

Generously coat the bottom and sides of a deep frying pan with butter. It’s better to even leave small pieces of butter at the bottom. This will prevent your pie from burning on the bottom. Use a frying pan with a thick bottom and walls so that the pie heats up evenly and does not burn.

  5. STEP 5

    STEP 5

Wash the parsley, dry and finely chop.

  6. STEP 6

    STEP 6

Cut as much as you need from a sheet of lavash and place it in a frying pan so that the edges hang down. To prevent the bottom of the pie from tearing and the cheese from leaking out, place the pita bread in two layers. Spread some regular cheese on top of the pita bread.

  7. STEP 7

    STEP 7

Cover the cheese with another sheet of pita bread and sprinkle it with some of the cheese. Spread a little chopped parsley over the cheese.

  8. STEP 8

    STEP 8

Repeating the layers of pita bread and two types of cheese with herbs, fill the entire pan until the ingredients are left with one piece of pita bread and some regular cheese.

  9. STEP 9

    STEP 9

Cover the pie with the overhanging edges of the bottom pita bread and place the last piece of pita bread on top. Sprinkle the pita bread with the remaining grated cheese. Carefully pour water into the gaps between the cake and the pan, being careful not to let it get into the cake itself.

  10. STEP 10

    STEP 10

Place the frying pan on the stove over low heat and cover with a lid. Cook the pie for about 20-25 minutes. The cheese inside and on the surface should melt and the water should completely evaporate.

  11. STEP 11

    STEP 11

To make the cheese brown on top, you can put it in the oven on grill mode for 3-5 minutes. Bon appetit!

I made a pita bread pie with cheese in a frying pan for a snack. I had a package of thin pita bread weighing 280 grams. Instead of feta cheese I used Adyghe cheese. Instead of fresh herbs, I added a mixture of dry Caucasian herbs. I cooked the pie in a cast iron frying pan with a diameter of 26 cm for about 16 minutes. Still, I took a frying pan that was too large for that amount of lavash; the top of the pie was difficult to cover with lavash, but this did not affect the taste in any way. The pie turned out very tasty. The combination of two types of cheese is simply amazing. This pie is a great option for a snack: quick, simple, filling. Maria, thank you very much for the wonderful recipe!
